You Need :
1 kilo Eggplant
6 eggs
10 cloves garlic diced
1 tbsp salt
1/2 cup flour
3 round onions diced
2 tbsp black pepper
4 tbsp soy sauce
Cooking oil for deep frying
Water for boiling the eggplant
Procedure:
Wash the eggplants. Remove the stems. Cut into 3 pieces. Boil until cooked or tender.
Remove from the pan. Put in a big bowl.Mash them to fine texture.
Beat the eggs and mixed to the mashed eggplants.
Add the flour and mix well. Add all the remaining ingredients and mix thoroughly. Mix well and form into patties. About 20 patties.
Set aside.
Heat the frying pan and pour oil for deep frying. Fry the patties and see to it that both sides are golden brown.
Serve in a burger bread. Topping with a slice tomato and onion. With catsup if desired.
Or you may serve the patties with plain rice or garlic rice .
