Cabbage soup for weight loss and health benefits
I have a lot of favorite foods, but the healthiest one that I can think of is cabbage soup.

I don't know about you, but especially during the pandemic, we weren't able to get outside much, nor breathe that fresh air and get our body moving enough. Therefore, some of us ended up with love handles or a dreaded muffin top or two, or our bodies got a bit sluggish. Heck, that can happen at certain times of the year, like during the holidays. Right?

This recipe might not sound so tasty to some people, but trust me this cabbage soup is the real deal. It works. By the time you're done adding all the fresh vegetables to it, plus some spices and broth, and cooking it, you may thank me. It's delicious.

Buy fresh vegetables. I start with the main ingredient--cabbage.

Add enough water to the bottom of a large pot. I usually add 2-3 cups. You can always add more later. You don't need to completely cover the vegetables with water at this point.

Chop:

* Cabbage. Cut in quarters, then once more. It can be green, Chinese, red/ purple, or whatever kind you like.

* Spinach or do what I do. I like red Swiss chard because it also gives it a nice color (large or small pieces. Your choice)

* Tomatoes (crushed, pureed or chunky. Your choice)

Both of these have antioxidants in them. Very healthy
* Onion/s chopped
* Shallots or minced garlic ( you can also use some powdered garlic)

* Green beans broken into bite-sized pieces

* Optional: slices of mushroom, bell peppers, zucchini.

Broth. fresh or canned. Chicken, beef, (turkey?) or vegetarian. Your choice

Add salt, pepper, and whatever other seasonings you normally use. I sometimes add sweet basil. You can toss in some boullion too.

The soup starts out almost too big for the pot, but after it's cooked it will have shrunk down quite a bit.

First, I bring it all to a boil, then I turn it down much lower heat, and if possible put a lid on it to let it steam. Keep your eye on it so it doesn't boil over.

I keep turning the vegetables so it all gets cooked down. You can tell when it's almost done as the vegetables with be more limp. I like to cook just until they are partly limp. That way if I have to reheat it they don't turn mushy.

** Optional: For carnivores, you could add a little leftover ground beef, steak, or even chicken if you like, but originally this is all vegetables.

This recipe helps with weight loss. It cleanses the body system too. Remember what goes in must come out. It will flash out any toxins. Depending on how long or often you use it, you can drop some pounds, plus feel more energetic.

I only use this like a liquid fast diet. It's a one day thing and it's all I eat for one day only. I sometimes do this once or twice a month.

Each time eat as often and as much as you like. You could go longer than a day too, but you might find yourself craving more protein.

Also, if it's kept in the fridge, after it's cooked, it starts losing the freshness. Fresh is best. But the morning after might be fine.

* Oh, one more thing, I do cheat a little by adding just a pat of almond oil butter or any butter I have to the bowl. It adds some flavor.
