Form = Cinquain Notes: ▼ RECIPE: Ingredients: Fresh salmon fillet(s) (8 - 10 ounces for 2 servings) A pinch of salt 1/2 t. garlic powder 2 - 3 T. mayonnaise 1 T. lemon juice 1 T. chopped fresh chives (or 1 1/2 t. dried) 3 T. chopped fresh dill (or 1/2 t. dried) 1/2 Teaspoon grated lemon peel/rind (Optional additions/variations: a dash of: celery salt, dried celery flakes, Worcestershire powder, dried parsley, nutmeg, paprika, lime juice) Directions: Preheat oven to 400 degrees F. Lay the salmon fillets skin-side down in a glass baking dish coated with a non-stick spray. (I prefer an olive oil or coconut oil spray.) Sprinkle very lightly with salt. (I prefer Celtic sea salt.) Sprinkle garlic powder evenly over the salmon. Top with olive oil and spread evenly. Spread the mayonnaise over the entirety of the top and sides of the salmon. Gently spoon the lemon juice over the mayonnaise topping. Sprinkle the herbs evenly over the coated salmon. Bake at 400º for 20 minutes. The dark color of the filet(s) should have lightened significantly. If preferred, remove skin before serving. Suggested pairings - Our favorites include: Rice Select Royal Rice Blend - steamed broccoli topped with shredded cheese - steamed buttered asparagus - home canned green beans - cilantro lime rice - riced cauliflower - riced broccoli - herb roasted potatoes image source: Perry's Plate |
