Important question! Why?

It's stuck. Bowsette has been trying to change back ever since she first put it on, but the darn thing won't come off.

It's permanent. The Crown has done its job and is now just another piece of clothing, and Bowser is stuck as a busty Peach lookalike!

It's a choice. Bowser could change back whenever he wants to, and he has on several occasions, but choses to wear it and take the form of Bowsette over being his usual self.

It's a means to an end. Bowser is donning his Bowsette persona to fulfill a goal he couldn't achieve as a giant turtle.
