Midna could turn Epona into a Hylian woman, one who could take a more active role in Link's quest. In fact, why not just make her the heroine outright? Link surely wouldn't mind being her sidekick for a bit.

Or, she could elevate Epona into the princess of Hyrule. If she were royalty, Link would owe her his loyalty as a devoted subject. Of course, Hyrule already had a princess, but that would be easy enough to deal with. Link would need a new steed, after all.
