In Chubster without a Cause Wendy stands up for the fat girls in the school(Lisa Burger, Henrietta, possibly Heidi depending on the timespan) and decides to gain weight to support them

Or maybe you can pick something else. Maybe in Season 4 when she developed a crush on Cartman, she goes with him and starts to gain.
Maybe she discovers Stan likes fat chicks.
Maybe she suffers a mental breakdown.
