How about Iroh instead of letting Zuko go on the foolish quest to capture the Avatar, took to the Fire Warriors and the Dragons Ran and Shaw. Once there Iroh used some tough love to knock some sense into him.
So after years of training, Zuko finally realized that he has to stop his father.

So before he leaves the dragons give Zuko some of their chi. This not only give Zuko's Fire Bending a boost but also makes him very charismatic to the ladies.
