Uh huh! I stay as far from white flour as I can (well, I just gave it up about a week and a half ago, so I am kind of new to the "philosophy"!). It's hard to replace white flour with whole-wheat in some things, such as pie crust (I gave in nad made half-white, half-wheat), pancakes, and cakes...some wheat flours aren't so heavy, though, which I'm going to look for next time I shop.
You eat whole-wheat pasta, right Zib? I'm going to try making homemade, hand-dried pasta when I'm in Eureka again. Do you make your own pasta, too?
