His eye color may be rare, but do an image search for "light gray eyes" and you'll see that it falls within the range of normality.
What AI are you using for image generation? I have no problem generating a variety of skin tones and ethnicities using Photomaker2, provided you find and/or mix photographic models with the appropriate look.
