I have my various items stored in folders and subfolders. Recently the Portfolio Organizer has started showing just a subset of the items in each folder. Between folder edits, it's consistent in what it chooses to display. For example, I have a folder called "General Writing" which contains subfolders for the years 2023, 2024 and 2025. It always shows the 2023 and 2025 ones, but not 2024. Before I created the 2025 folder, it would always show the 2024 folder but not the 2023 one. A similar thing is going on in my "Contests And Activities" folder.
