Though the nerd in me can chime in with some info, hope it's useful!
Here goes the nerd:

A keto diet, as well as fasting, have been proven to be extremely helpful at normalizing insulin sensitivity in Diabetes Type 2.

Soy milk and other nut milks are a great substitute for lactose intolerance!
Stevia is a great sub for sugar too!

When I was in the US, I had much more access to these products and I remember after being strict with my diet (as I was working a heavy physical job ~50-60h/w), when I ate my first hamburger after that I literally flushed from how efficiently my body was utilizing the energy!

Let me know if you're ever in need of info or recipes, I have a lot of knowledge on nutrition and decent bit biology.
(And I love cooking up new recipes and variations thereof, it's fun!)
