You can basically accomplish this by not adding options to the end of the chapters you add to your own stories. Then, when you're ready to add to a chapter, edit it to add the option(s) you're going to write at that time.
... But since this is "writing.com", we don't want to overtly encourage that type of interactive over the norm where people can add their own writing after reading to an end point -- so I think we'll just leave the un-official way I mentioned above as the only means to do it.
