Yes, you can. Simply use the Edit function each time you want to add a new assignment to the static item.

I created a dedicated folder (not sure if every grade of membership gives you this option on the menu), and a static item for each assignment. The only downside is, having to fill out the dratted form every time, and starting over every time you miss something.
