The basic reason we don't offer tabling is that a failure of the user to create a correct table structure will create completely broken pages on Writing.Com. IE, failure to close a table correctly will result in a half page being mis-displayed, include the Writing.Com navigation and the item's content itself. This is very bad from both the standpoint of supporting members trying to use and debug it, as well as visitors to the site that happen to fall onto a page with a broken table implementation.
I entirely acknowledge that it's something that would be great, it's been on our todo list for nearly 10 years and we'll likely develop something eventually that will be smart enough to prevent some of those errors -- but that is what turns what could be a simple "replacement" of WritingML to HTML into something smarter and more complex.
