I doubt this'll really have any effect, but my suggestion is actually to not change the site background. I've long thought that the color on this site was one of the great things about it, bringing to mind thoughts of warmth and parchment. Change it to white, and yes, it'll seem more professional, most likely, and it'll be easier to match things to - but it'll seem less friendly and familiar, and more like "just another website." One of the things that makes me (and others I know) quickly loose interest in a website is a dull, too-common appearance.
Rather than changing the background color, I'd say change other colors around the site to match it better.
