The owner of an interactive story can remove / delete any chapters they wish to. This is noted on the form where you submit a new chapter. That form also notes that since chapters build on each other, if a chapter before the addition you've made is removed, so too are the chapters after it. Here's a quick screenshot of that note from the interactive chapter form:



You can try to contact the owner of the interactive(s) in question for more information on why they deleted the chapter(s), but please note they are not required to give a reason or notice of the chapter deletions.

Remember that since you're contributing to another member's story, you do not have control over what happens to the material. We do recommend (on the interactive chapter submission form) that you keep a copy of your writing since it will not be in your control after submitted.
