January Memoir: Family Recipe Spanish Rice
My grandmother Mary Newland made a dish she called Spanish Rice, which contained ground beef, rice, and tomato sauce. Over the years I have take Grandma Mary's recipe and changed it. I am planning on changing the Spanish Rice recipe again, but this time I am using a recipe for salsa that my sister-in-law gave me.

My Sister-in-Laws Salsa Recipe

3 cans Ortega hot Jalapenos chopped
2 cans Ortega green chillies chopped
1/2 cup white onion minced
1 tablespoon minced garlic
6 or 7 [something (probably cups)] Romano [I think it's cheese] (It's been so long since I wrote down the recipe that I'm not sure what this is because I have it spelled romana)
1/2 cup celantro

Instructions: Open cans and put everything into a dish and let it set for a day and then put it in a blender or maybe it's put in blender and then let it set for a day. Once I get everything mixed together and it tastes like I think it should taste, I may not get as far as the blender and instead put it straight into the Spanish rice recipe.

Grandma Mary's Spanish Rice Recipe

1 lb ground beef cooked
1 cup rice cooked
1 large can tomato sauce
salt and pepper to taste

Instructions: After the ground beef and rice are cooked (you can cook the rice the day before) mix them together in the skillet (I use an electric skillet). Then add the tomato sauce, the salt, and the pepper and then let the content simmer until hot.

My Old Spanish Rice Recipe

1 lb ground beef cooked
1 cup rice cooked
1 nice sized bottle of either green or red salsa

Instructions: After the ground beef and rice are cooked (you can cook the rice the day before) mix them together in the skillet (I use an electric skillet). Then add the salsa and let the content simmer until hot.

Author's Note: Once I have my new recipe completed done to my tastes, I will post another entry in this journal containing the recipe.
