Nothing beats a pot of fresh snap green beans. Especially slow cooked in the crockpot along with carrots and yellow baby potatoes. This is a simple, southern style dinner that is easy and healthy. We typically serve this with cornbread or breadsticks. Sometimes I do add cut up smoked sausage, pollock sausage, ham, ham hocks etc can also be added and over the years I've added those and even some chicken or ground beef. BUT, since we are trying to cut down on our meat consumption both for health and financial reasons, we made this a meatless meal and neither my husband or I even missed the meat! YOU NEED: 2 pounds fresh green beans (cleaned and snapped) 1 onion diced 1 pound baby yellow potatoes 1 pound baby carrots 1 packet onion soup mix 1 packet dry cream of mushroom soup 3 Chicken Boullion cubes 6-8 cups of water 1 teaspoon black pepper 1 teaspoon pink salt 1 teaspoon paprika Place all ingredients in your crockpot and cook on low 8-10 hours. (I put mine on about midnight and let them slow cook ALL night and most of the day).
