Sometimes we forget the mountains

I love the barbecued meats and sausage
at Truth Barbecue in Houston,
But I believe in mountains more.

I sampled fried sopapillas
In a little diner outside Dallas,
But I savor the taste of mountain breezes.

The Chicken fried steak
At De Wese's is close to heaven
But doesn’t compare to mountain air.

They say peanut butter pie
Will take the heat out of the Texas hills,
But my favorite dessert is the crunch of mountain snow.

There is truth in the iron and granite of Guadalupe Peak,
Even though I have logged more miles
Through car windshields than hiking her trails.
