Ok first off do you want her to start off fat or work up from normal weight? Perhaps shes always been fat or this s story starts after some incident or a accident?

By the way these weight choices are only for the main six ponies, so don't sweat, all other characters pretty much go straight to actual choices.
Better Interactive Stories

You have the following choices:

1. normal weight: I assume 60 to 80lbs

2. chubby: 100 to 130lbs

3. fat: 160 to 200lbs

4. obese: 250 to 300lbs

5. higher for our pony.
