What's the purpose of having anything in a story? It can be used to further the plot, set the mood, infer facts about the situation/characters, accentuate certain aspects of the story, etc. Symbolism is used widely and extremely varied.
The theme isn't the be all and end all of the story, it is just one aspect of a greater picture.
