On January 25, 2015 it'll mark two years since Nan died. Nan was Italian and always made her pasta, sauce and meatballs from scratch. Needless to say, I won't eat pasta, sauce and meatballs that aren't homemade - I'm very picky when it comes to that. Mom does a great job with her meatballs and sauce and I've been learning myself since I will need to know this for when I finally do move. Before Nan died, she sat me down and showed me how to make her spaghetti. Then she sat mom down, I watched that as well. However, Nan mixed the dough by hand on her big wooden board. Then she had a hand machine to make the spaghetti strands. It took hours. On Friday when mom and I made the spaghetti - first time in two years - we used the stand mixer, then bought the pasta attachments. MUCH EASIER! I want to share the recipe with y'all because it's easy and it's much better than the boxed pastas. Enjoy! Nan's Spaghetti 3 1/2 cups of flour 4 eggs 1 tablespoon of water 1 teaspoon of olive oil Start mixing with a regular mixer, then switch to a bread hook. You will need to knead the dough. After the dough is kneaded, press the dough through the flattening attachment. It was flatten and elongate the dough. Repeat again. Add the pasta attachment and cut the thin dough slices in half and feed through the pasta attachment. Or get a spaghetti machine (nan used the machine) that will do the same thing. Spaghetti will form. To cook the spaghetti, add it to boiling water and cook until al dente. It makes a lot of spaghetti. Also, if anyone is interested: I blogged about my cooking adventures in 2014.
