[E] Hirts has sold cheese for over a century.

♠♠♠♠♠

We go up three flights of stairs
to buy a basket
wander thru the aisles.
The cheese of the world beckons.

Do we buy the green-laced Derby of Ireland,
the sweet brown gjetost from Viking-lands
the best from Parmagiana?

Here the raw milk treat
from Picconning is sliced and savored

And gently placed within the basket

For a century
at Hirts the world's history
has been written with the names
of cheese.
