Loaded Potatoes
Sweet Potato or Russet potato, baked
1 cup black beans, drained and rinsed
1/4 red bell pepper, chopped
1 tbsp olive oil
1 tbsp parsley, chopped
Salt to taste
shredded cheese

Sauté bell pepper in olive oil.
Add black beans, heat through
Stir in parsley and cheese
Salt to taste
Fill baked sweet potato
Enjoy
