Sauced Pasta with Crispy Tofu
Extra firm tofu, pressed and cut into bite sized cubes
2 tbsp olive oil
Garlic
2 tbsp soy sauce
3 tbsp natural peanut butter
1 tbsp honey
1 tbsp lime juice
1/4 cup hot water
Ginger
1 tsp chili sauce
1 tsp sesame oil
2 tbsp corn starch
Cooked spaghetti or Japanese ramen
Spinach
In small bowl, whisk together olive oil, garlic, and half of soy sauce
Marinate tofu in this mixture making sure to coat well
Let sit at room temperature for 45 minutes
In medium bowl, combine peanut butter, honey, lime juice, remaining soy sauce, hot water, ginger, chili sauce, sesame oil, and a touch of additional garlic. Set aside
Heat skillet on stove
Dredge tofu in corn starch
Crisp tofu in skillet, being careful not to burn
Toss warm pasta with spinach and peanut sauce
Top with crispy tofu
Enjoy immediately
