Potato Pancakes

4 cups leftover mashed potatoes
2 cups flour
2 tbsp baking powder
2 eggs
1 cup milk
salt and pepper to taste
Butter to fry

Mix all ingredients together in a large bowl.

Place the butter in a frying pan and let melt on medium heat

Drop pancakes by heaping tablespoon into the pan

Fry until golden brown and flip.

Smash and continue to cook until brown on both sides

Remove from heat and serve immediately.
