From time to time, I do fall back on old habits and processed or frozen items make it back into my diet. Occasionally, that's ok! I do try to keep it to once or twice a month. This meal is one such occasion as it calls for frozen battered fish fillets. The recipe below made 5 wraps. I ate two, hubby ate three. YOU NEED: 5 frozen fish fillets cooked crispy (I used my air fryer} 5 whole wheat tortillas 3 cups shredded cabbage and carrot mixture 1/2 cup plain yogurt 1/2 cup low fat sour cream 1/2 teaspoon salt 1/2 teaspoon celery seed 1/2 teaspoon lemon pepper seasoning 1/2 teaspoon sugar Finely diced tomato Finely sliced green onions In a bowl mix the sour cream, yogurt, seasonings and sugar until smooth and well blended. Mix in shredded cabbage and carrot until well coated and chill. Air fry or bake your fish until golden brown and crispy. Add a tiny bit of oil to a pan and heat on med high. Place one tortilla in pan and toast it. Remove from pan. Place 1 heaping tablespoon of coleslaw on the tortilla. Place a fish fillet on the coleslaw. If you want, you can break the fillet into bits so it is evenly scattered in the tortilla. You can drizzle with your choice of hot sauce, salsa or guacamole and even add hot peppers or shredded cheese if you like.
