A partial list of some of the carnival/arcade games floating around in my head.
Venom 6:
Think a vertical version of whack-a-mole where the player stands in a cylinder. The object of the game is to whack the cobras that pop out of the holes around them. The cobras spit venom at the player.(the venom is really green colored water) The amount of cobras whacked equals the amount of tickets won.

Frogloon Fishing:
Air filled frog shaped balloons whirl around in a fan filled chamber. The frogs have magnets on them. The player than casts their fishing rod which has a magnet on the end of the line and tries to hook the frogs.

Pyramids of Tut 2:
A game of skill in which the player drops a quarter into the machine and than using the levers must navigate the quarter through Tuts pyramid. The object of the game is to avoid the booby traps and pit falls and find secret paths throughout Tuts pyramid in order to win big amounts of tickets.

Ding Dong Ringer with Report:
This is a modern version of the classic high striker game where players swing the hammer against the block and try to ring the bell at the top. In this version instead of just the bell ringing there is a loud explosion and fire and sparks shoot out from the top of the pole.

Venom Extreme Ring Toss with Clown Fall:
In this extreme version of ring toss players try and throw green colored rings around snakes heads while the snakes are rotating in a 360 degree fashion. A mechanical clown is riding a unicycle on a tight rope above the snakes. When the player lands a ring on the snake in the center the clown than falls into the hungry snake below!

Masters of Tut:
In this new version of the Pyramids of Tut series players must navigate their quarters through a more complex pyramid to locate the mummy king's treasure.

Demon Skee:
Forged in the fires of a deep dark dungeon Demon Skee puts a new twist on skee-ball. Players throw blue colored balls down the alley. They try and hit the Demons that pop out of the point holes rather than get the ball into the holes.

Pop 'N Knock Dummies:
A miniature version of the famous ride The Scrambler. Instead of the carts that people would sit in there are wooden figures of clown kind. The object is to throw a baseball at the figures trying to knock them over. With the right timing you can create a domino effect causing all the figures to fall with a loud knocking/balloon pop noise to amaze even the most seasoned game players!

Crabloon Fishing:
With the success of Frogloon Fishing comes Crabloon Fishing. Essentially the same game however their are now balloon shaped crabs instead of frogs.

Bonky Bowling with Lighted Ramp:
Think traditional bowling meets Pinball. Players use the bowling ball to knock down the pins. The real difference is the bowling alley which is twice the size of a regular bowling alley. The alley is filled withs ramps, bumpers, tunnels, even a 4 foot high ferris wheel! If the ball is bowled into the right tunnel it will than take a ride on the ferris wheel shooting it up the lighted ramp for a guaranteed strike every time!
