Goddess of plants and agriculture, who dealt with advances from both Zeus and Poseidon, but other than that she isn't in too many stories. Being the goddess of plants must mean she's got quite a liking for eating them, and her daughter Persephone being in the underworld must be quite stressful for her...

Amphitrite:

Wife of Poseidon, although with how often he cheated you'd never know. Living in the sea and being treated like a queen must mean there's a LOT of seafood that will end up around Amphitrite's gut...
