I say you should do what you feel comfortable with. There are a lot of characters here, and you already have some of them fleshed out. I would do the most important characters that you haven't already created a profile for. Remember, you're only being asked to commit to a minimum of 15 minutes on any one assignment, so how many characters you want to fit into that time is up to you.
