I don't understand the distinction. Stamping your foot does show anger through symbolic action. Culture in and of itself is full of symbols, many that we don't even realize. Language itself is a series of symbols. It isn't even limited to culture; bees dance to communicate information, for example. There is no innate connection between the stamp of the foot and the emotion we call anger. It is something that occured in the development of our culture today; a socially agreed upon action that we have all come to know means anger. Without thes prejudices none of us would know what a foot stamp is supposed to mean. As such, the stamp of the foot isn't a literal expressioin of anger, but a symbolic expression of anger. Yes, it does show anger, but it also symbolizes it.
As a side note, I'm curious; how do you know that it isn't you who are projecting your beliefs on their works?
